Tasting note
Chacha is made from the pomace of our qvevri — the skins, stems, and seeds that gave everything they had to the wine, then gave a little more. A single distillation in a traditional copper pot still. Clean, fiery, grape-forward. Drink neat, in a small glass, after the table has grown quiet.
Origin
In 2011, chacha became Georgia's first Protected Designation of Origin spirit. Every Georgian family has an opinion on whose chacha is best. Ours is made from what the wine left behind — the honest remainder.
Food pairing
After dinner. Before the songs. With aged sulguni broken over bread, or dried persimmon in late autumn.
