Tasting note

A white dry wine, made from Tsolikouri grapes cultivated in the village of Nigazeuli — 850 metres above the sea, in the high mountains of Shuakhevi. Fresh, delicate taste. On the nose, green apple and spruce, a coolness that belongs only to this elevation. Vinified the Georgian traditional way in qvevri (clay amphorae buried in the cellar floor), the large lemon-shaped terracotta vessels. No chemical additives. Natural sediment may appear.

Origin

Tsolikouri is the white grape of western Georgia, and Nigazeuli is a village in the mountains of Shuakhevi municipality, where cold nights follow long days. The spruce note is not a metaphor. It is what the mountain gives this wine. We planted the mountain vineyard at Nigazeuli in 2012, on ground the Khimshiashvili name has carried for six centuries.

Food pairing

Adjaran khachapuri, straight from the oven. Trout grilled from the Machakhela. Fresh sulguni. Walnut pkhali. Any table where the bread is still warm.
